Everything I do in the kitchen comes from a single belief: that great cooking is not about following recipes to the letter — it is about understanding the why behind the food. When you understand why a technique works, why you rest meat, why you build a sauce in stages, you stop needing recipes and start cooking from instinct. That understanding is what I try to give people.
The Isle of Wight has shaped my cooking as much as it has shaped everything else. Its tomatoes, garlic, crab, and fresh fish find their way into almost everything I make. Cooking here, with these ingredients, in this light, feels like a privilege.
