Paul started cooking in his teens, he was self-taught initially and enjoyed cooking as a way to relax after a busy day at work. In 2003 he went to university to do a two year night school City & Guilds in Professional Catering. He qualified in 2005 and then worked in the kitchens at Le Manior aux Q'uat Saisons. The experience had a profound effect on Paul who spent a couple of years developing his ideas for his own food business. 

He started designing and developing a range of ready meals which he took to market, literally, in 2009. He developed a reputation for good food using local ingredients from local producers. The local BBC Radio Oxford station heard his story and invited him to be the resident chef on the Afternoon Show with Jo Thoenes, he also presented on some of the Sunday morning and lunchtime shows. This involved cooking in the studio and working with Master of Wine Alistair Cooper, the sessions involved food and matching wines.

Alongside this Paul founded the Wallingford Food Festival in 2011, focussed on promoting and supporting those local food and drink producers. The festival ran for five years and grew quickly with over 5000 visitors in 2015. During this period the festival won three tourism awards from Tourism South East!

Paul also was invited to teach at the WI Cookery School in 2012. With his passion to pass on knowledge and enthusiasm for cooking Paul took the opportunity and developed a range of courses for the general cookery school and became a favourite with many of the county federations of the WI that used the education centre at Denman College. He managed the cookery school for six months implemented a number of changes including introducing reusable packaging. 

All the while Paul has been running his catering business, The Late Chef, from his Garden Kitchen. With many corporate clients, plus many local clients Paul develops menus and food for their events. Catering for four to two hundred plus people Paul enjoys the challenge and the heat of the kitchen when producing food for these events.

The pandemic has hit hard but Paul has spent the time developing a new website and taking his business in a new direction, online cookery courses.
